There’s something deeply comforting about the smell of baked apples and cinnamon wafting through the kitchen, especially on a chilly autumn morning. This baked apple oatmeal has become one of my most-loved fall rituals.

It’s warm, nourishing, and simple — the kind of recipe that feels indulgent and you still feel good after eating it. Made with wholesome oats, tender apples, and a hint of natural sweetness, it’s gluten-free, dairy-free, and refined sugar-free.

What I love most is how it fits into real life. You can bake it on Sunday and have a week’s worth of satisfying, ready-to-heat breakfasts waiting. It's a small act of nourishment that makes mornings feel easier, no matter how you're feeling. Because sometimes, healing starts with something as simple as breakfast that loves you back.

Ingredients

  • Cooking spray or butter

  • 2 chopped peeled Honeycrisp, Pink Lady, or other crispy apples (about 2 cups)

  • 2 cups regular rolled oats

  • 1 cup toasted chopped pecans or walnuts, divided (I usually just toast these quickly on the stovetop in a sauté pan)

  • 1/3 cup honey or maple syrup

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 2 cups milk (dairy or non-dairy)

  • 2 large eggs or flax eggs

  • 1 teaspoon vanilla extract

  • 4 tablespoons butter, plant-based butter or coconut oil, melted

  • 1/2 cup dried fruit (raisins, cranberries, cherries or dates)

Directions

  1. Preheat oven to 350°F. Lightly grease an 11- x 7-inch baking dish with cooking spray or butter. Spread chopped apples evenly in the bottom of the baking dish.

  2. Stir together oats, 1/2 cup toasted nuts, baking powder, cinnamon, and salt in a large bowl. Whisk together milk, honey/maple syrup, eggs, and vanilla. Gently stir milk mixture into oat mixture until well incorporated. Add melted butter/coconut oil until just incorporated. Fold in dried fruit.

  3. Pour the oat mixture over the apples in prepared baking dish. Top evenly with remaining 1/2 cup of nuts.

  4. Bake in preheated oven until browned and set, 40 to 45 minutes. Let stand 5 minutes.

Serve with a splash of almond milk or a spoonful of Greek yogurt (or coconut yogurt for a dairy-free option) and enjoy that little moment of warmth before the day begins.
