I started making these date balls when I realized my sweet tooth wasn’t going anywhere and my occasional cheesecake splurge just wasn’t cutting it.

I wanted something I could reach for more often that made me feel good while satisfying that craving.

This recipe is really simple—just blend, roll, done. No baking, no big effort (which is my #1 food goal).

Dates give them that soft, caramel-like sweetness, and they’re also packed with potassium, antioxidants, and fiber, so it’s not just a quick spike-and-crash situation. Paired with oats and some healthy fats from nuts or tahini, they’re an easy “healthy” treat option.

Ingredients

  • 12 Medjool dates, pitted

  • ½ cup oats

  • ½ cup nuts, roughly chopped (walnuts, almonds, pistachios, or cashews all work well)

  • ½ cup tahini or nut butter of choice (peanut or almond butter are great options)

  • 2 tsp cardamom powder or 1 tsp cinnamon (optional)

  • Dash of salt (optional)

For Rolling (Coating Options)

  • Ground pistachios or crushed walnuts

  • Desiccated coconut

  • Toasted sesame seeds

  • Cocoa powder

Instructions

  1. Add the dates, oats, nuts, and tahini (or nut butter) to a food processor.

  2. Pulse until everything is well combined and a dough forms.

  3. If the mixture feels too dry to hold together, add 1–2 tablespoons of hot water, a little at a time, until it comes together.

  4. Scoop about 1 tablespoon of the mixture and roll into a ball.

  5. Roll each ball in your coating of choice (if using).

  6. Store in the refrigerator for up to one week.
