Sundays are brunch days in our house.

We set aside this time nearly every week for a slower, more indulgent breakfast—one that’s less about rushing out the door and more about being together. It’s our small ritual of quality time at the table before the week begins again.

Most Sundays lean savory. But every once in a while, a pancake craving sneaks in and changes the plan.

That’s where these orange hotcakes come in.

I love crepes. He loves pancakes. These are our compromise—light and fluffy with just enough structure to satisfy a true pancake lover. Slightly sweet, brightened with orange juice, and easy enough to make without turning brunch into a project.

They’re gluten-free, dairy-free, and unfussy in the best way. Perfect for those mornings when you want something special, without a lot of effort.

Serve them with whatever makes your brunch feel complete. I’m partial to a simple berry sauce, but these hotcakes welcome all your favorite toppings.

Orange Hotcakes Recipe

2 eggs, beaten
¼ cup olive oil
2 cups oat flour
½ teaspoon baking soda
½ tsp salt
2 cups orange juice

Whisk eggs and oil together. In a separate bowl, combine dry ingredients and add to the egg mixture alternately with the orange juice. Whisk or blend until smooth. Cook on a lightly oiled griddle over medium heat, flipping when bubbles form and edges are set.
